My name is Amanda Tolan, I have been an avid and adventurous home cook for many, many years and studied for my City & Guilds Catering qualifications at Bishop Burton College.
My husband’s work took us overseas to India, where we lived in both Mumbai and New Delhi for eleven years. On my visits back to the UK I would go to cookery courses to increase my skills further and keep up to date with latest techniques and food trends.
For example I spent a week at the Artisan School of Food in Nottingham learning advanced bread making and more recently a day sausage making, patisserie sessions at Leiths in London, and my absolute favourite – the courses run by the brilliant Rosemary Shrager, who kindly certified that I attended all her sessions which at the time were based at Swinton Park, now in Kent.
I was encouraged by one of these mentors to run cooking classes in India, which I did from home with great success. I got lots of satisfaction from teaching and had loads of fun meeting new friends from massively varied walks of life, and still now get messages from past students for advice. I got excellent feedback from them and you can see some of their reviews here. We also did a lot of home entertaining. My favourite times from a cookery perspective were the business dinners we hosted where I could get on with the cooking and leave my husband and the guests to enjoy the food. This is where my idea for hosting a supper club came from.
During our time overseas in addition to the much varied Indian regional food, I have been lucky to experience different cuisines particularly in Asia and the Middle East and learn from some amazing people. My husband and I spent ten days at the Mandarin Oriental Cookery School in Bangkok and went back for couple of days last January to reacquaint ourselves with the fabulous Chef Narain Kiattiyotcharoen. In 2015, we spent a lot of time in France, a country and a cuisine which we both adore.
For the foreseeable future we are based back home in the East Riding of Yorkshire, and will be running cookery classes and a supper club where the menus will reflect our travels and whatever takes my fancy seasonally. Expect home cooked food prepared from scratch with adventurous twists and most importantly excellent flavours.
