Midweek Supper

Lately with the exception of a couple of curry nights, we seem to have eaten potatoes with everything, so last night I dug out an old recipe from the marvellous ‘Easy Entertaining’ book by Darina Allen. Chicken and Chorizo with Pasta.   I would have preferred Rigatoni but Penne was in the cupboard. If you’re looking for a break from Christmas fayre I would highly recommend and am sure it would taste almost as delicious with leftover turkey, although the cooking time of the poultry would need be reduced accordingly…give it a try!!!    Chicken & Chorizo Sauce for Pasta
